Form: 

Our ceremonial cacao is made from 100% organic, gently roasted Chuncho cacao beans, grown in the shade of Amazonian trees and processed directly in Peru using a traditional, artisanal – almost ritual – method.

The beans are first carefully fermented and then slowly roasted at low temperatures to preserve their original aroma, depth of flavor, and full nutritional profile. Afterward, the whole beans are stone-ground into a smooth, velvety paste with no additives, sugar, or emulsifiers.

The result is a non-defatted, non-alkalized cacao paste of ceremonial quality that retains all its natural cacao butter content – approximately 50–55%.

This gives the cacao mass a soft, buttery texture, rich flavor, and intense aromatic profile, ideal for both ceremonial and everyday use.

 

Variant: Cacao Chuncho

Chuncho cacao is one of the oldest genetic lines of cacao in the world. It grew in the Cusco Valley long before the arrival of the Spaniards and is considered the "jewel of the Andes". It is known for its delicacy, high flavonoid content and its use in the preparation of cacao drinks in traditional rituals.

This variety has been cultivated and protected for centuries by local communities, especially the Machiguenga tribe, who have maintained a deep connection to nature and plants. For the Machiguenga, cacao is a sacred gift from the earth and they are the guardians of its purity – thanks to them, the original trees and genetic diversity of Chuncho cacao have been preserved.

 

What is ceremonial cacao?

Ceremonial cacao is not just “dark chocolate.” It is cacao that is respectfully processed—from the selection of traditional varieties to hand-harvesting and subsequent processing.

It comes from pure and indigenous cacao trees, grown in chemical-free agroforestry systems that preserve biodiversity and soil health.

Flavor profile

Aroma: intense, delicately floral, with notes of honey, fruit and nuts.

Taste: complex, rich and creamy - harmonious bitterness combined with a pleasant natural sweetness typical of chuncho. The taste reveals notes of nuts, caramel and fruit. Without the acidity and bitterness characteristic of other cacao varieties

Finish: long and velvety, with a soft warm finish that leaves a smooth cacao sensation on the palate.

Texture: thanks to natural cacao butter, it is very smooth and melts on the tongue - ideal for preparing a delicious (ritual) drink.

Preparation:

1 serving

  • Heat 200ml of water or plant-based milk over low heat (do not boil).
  • Add 15-25 grams of cacao (30-55 grams for a ceremonial dose) and stir until completely dissolved.
  • You can flavor it with natural sweeteners (honey, panela, coconut sugar, maple syrup, agave syrup, date syrup, stevia) or spices (cinnamon, chili, cardamom, vanilla, black pepper, cloves, star anise, chili)
  • For a creamier texture, you can whip the mixture with a whisk or mixer.
  • It can also be prepared as an iced drink, just add a few ice cubes.
  • It can also be prepared as an iced drink - either let the drink cool completely and add ice cubes, or blend with ice for a refreshing creamy version.

Tip: Before drinking, create a moment of silence and pause, state your intention, and consciously enjoy the cacao moment - it will deepen the effect.

 

Storage:

Store the package in a cool, dry place away from direct light. Make sure it is tightly closed so that the cacao chuncho retains its aroma and flavor.
