Our cocoa powder is made from gently fermented Chuncho cocoa beans, which are first processed into our high-quality cocoa paste using traditional artisanal methods. The paste is then partially pressed to separate some of the cocoa butter, ensuring that the powder retains its rich flavor, aroma, and nutrients.
The result is a 100% organic, full-fat, non-alkalized cocoa powder with a naturally high cocoa butter content of 20–22%.

 

Variant: Cacao Chuncho

Chuncho cacao is one of the oldest genetic lines of cacao in the world. It grew in the Cusco Valley long before the arrival of the Spaniards and is considered the "jewel of the Andes". It is known for its delicacy, high flavonoid content and its use in the preparation of cacao drinks in traditional rituals.

This variety has been cultivated and protected for centuries by local communities, especially the Machiguenga tribe, who have maintained a deep connection to nature and plants. For the Machiguenga, cacao is a sacred gift from the earth and they are the guardians of its purity – thanks to them, the original trees and genetic diversity of Chuncho cacao have been preserved.

 

What is cacao powder?

Cacao paste is pure, 100% cacao – finely ground cacao beans that contain all the natural fat (cacao butter). It has a full, creamy flavor and is used for ceremonial cacao or chocolate making.

Cacao powder is made by pressing some of the cacao butter from the cacao mass. It has a lower fat content, an intense flavor, and mixes easily with water or milk. It is ideal for everyday and quick use, in drinks, smoothies, or baking.

Quillabamba is known as the “pearl of the jungle.” Located where the Amazon meets the Andes, this unique location creates ideal conditions for exceptional quality cacao. The rich soil, mountain spring water and subtropical climate give our cacao its unmistakable character.

 

Flavor profile:

Aroma: intense, delicately floral, with notes of honey, fruit and nuts.

Taste: complex, rich and creamy - harmonious bitterness combined with a pleasant natural sweetness typical of chuncho. The taste reveals notes of nuts, caramel and fruit. Without the acidity and bitterness characteristic of other cacao varieties

Finish: long and velvety, with a soft warm finish that leaves a smooth cacao sensation on the palate.

Texture: smooth, soft, dissolves well, creates a creamy drink even with a lower fat content.

Preparation: 

1 serving

  • Heat 200ml of water or plant-based milk over low heat (do not boil).
  • Add 2-3 teaspoons of cacao powder (10-15 grams) and stir until completely dissolved and a smooth drink is formed.
  • You can flavor it with natural sweeteners (honey, panela, coconut sugar, maple syrup, agave syrup, date syrup, stevia) or spices (cinnamon, chili, cardamom, vanilla, black pepper, cloves, star anise, chili)
  • For a creamier texture, you can whip the mixture with a whisk or mixer.
  • It can also be prepared as an iced drink - either let the drink cool completely and add ice cubes, or blend with ice for a refreshing creamy version.

Storage:

Store the package in a cool, dry place away from direct light. Make sure it is tightly closed so that the cacao chuncho retains its aroma and flavor.
